Creamy spinach with fried eggs

Sometimes I love simple flavors and raw dishes, with few ingredients. Because I don’t like cooking, but on the contrary I love, love too much, eating. In this period there are so many tasty seasonal vegetables, delicious to eat just with a little olive oil and a bit of salt. Spinach is one of my favorites, I like freshly cooked, still a little crunchy.
