Emily Hilliard’s pie blog “Nothing in the house” is a great source of spectacular pie dishes and I’m really excited to have found this recipe for speculoos pie. Spiced speculoos biscuits are a Belgian speciality and I’m a big fan of sweet potatoes too, so I think that together the combination is sure to make a pretty super pie. Emily made it with a ginger-snap base for an extra twist and the original idea for the recipe came from Ronni Lundy.
